Belgian Potato Tomato Soup

1/4 cup butter or
margarine
1 tbsp. white flour
10 tomatoes, peeled, seeded and diced
1 potato, peeled and diced
1 onion, chopped
2 carrots, sliced
1 can tomato sauce
2 tbsp. sugar
1/2 cup water

Instructions

In a large pot, melt butter and add flour until lightly brown. Add remaining ingredients and cook until potatoes are tender (adding additional water, if necessary). Remove from heat and puree in blender. Serve with cheese or croutons. Makes 12 servings.
