1 bunch beets, peeled, halved and sliced
1 beet greens, washed and finely chopped
3 stalks celery, diced
1 tbsp. lemon juice
Salt and pepper to taste
1 lg. onion, diced
4 carrots, sliced
1 tbsp. vinegar
1 tbsp. horseradish
1 can tomato soup

Instructions

Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 to 2-1/2 hours, until beets and carrots are tender.
