2 (4 lbs. each) chickens

Southern BBQ Rub

2 tbsp. salt
2 tbsp. sugar
2 tbsp. brown sugar
2 tbsp. ground cumin
1 tbsp. ancho chile powder
1 tbsp. pasilla chile powder
1 tbsp. cracked black pepper
1 tbsp. cayenne
4 tbsp. paprika

Instructions

Prepare a wood or charcoal grill and let it burn down to embers. Mix all rub ingredients together well and rub the chickens with the mixture. Let sit in the refrigerator for 1 hour. Place the chickens on the grill, on the side with no fire. Cover the grill and vent slightly. Cook for 3 hours or until chickens are cooked through.
