Barley and Black Bean Salad

Ingredients
3 cups | cooked pearl barley * | 2 cups | blacked beans, drained | 1-1/2 cup | frozen corn, thawed | 1-1/2 cup | dried tomatoes | 1 | sm. red onion | 1 cup | avocado, chopped | 1/2 cup | cilantro, chopped | 1 tsp. | salt | 1/2 tsp. | pepper |
Dressing
1/2 cup | water | 4 tbsp. | fresh lemon juice | 1 tbsp. | grated lemon peel | 1 tbsp. | vegetable oil | 4 cloves | garlic, minced | 2 tsp. | cumin |

Instructions
Combine all salad ingredients in a large bowl and toss gently. Combine dressing ingredients in a jar; close and shake well. Pour over salad and toss gently.

* To make 3 cups cooked pearl barley, cook 3/4 cup dry pearl barley in 3 cups of water for 45 minutes.
