In a large soup kettle, melt the margarine. Stir in flour; heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat; simmer for 10 minutes. Add remaining ingredients; stir until cheese in melted. Serve immediately.

I did not use any of the potato peel and omitted the sour cream.
We had a soup and salad luncheon for 25 people during the holidays and everybody loved this soup!
I made this soup for St. Patrick's Day. Very tasty and easy recipe to prepare using ingredients on hand. I omitted using potato skins (peel).
Serves 6.
Prep. time - approx 15 minutes (including cooking bacon and baking potatoes in microwave)
Total time - 35 minutes.
I haven't tried to make the receipe yet because you do not specify if you are supposed to cook the potatoes ahead of time, if you are supposed to cut them up. Can you help me with an answer?
I used low fat sour cream, 2% cheese, and cut the bacon in half to reduce calories and it was still great. It gets too thick though, so milk has to be added after the first day. I did not peel my potatoes and used 6 instead of 4.
