Beat 12 eggs with 1/2 cup milk. Set aside. Brown together sausage, green pepper and onion. Pour egg mixture in a 13x9-inch greased pan. Pour meat mixture in with eggs. Spread evenly in pan. Sprinkle shredded cheese in with both mixtures. Add 4 to 5 patties of butter in pan. Sprinkle with salt and pepper. Bake at 350°F for 1 hour or until done, inserting a toothpick in center. Sprinkle with remaining shredded cheese on top of eggs about 5 minutes before taking out of oven, or until cheese is melted on top. Baked eggs will rise.

You can use any type of breakfast meat, including bacon, ham or even shrimp. Or, add additional meats to the recipe.
I have used this recipe several times and I love it. This is a great idea for those overnight (in the RV)(WAR EAGLE!!!) tailgating trips or when we have a lot of overnight company. Would be a good "after the prom or Mardi Gras Ball" meal.
