Ingredients
3/4 lb. | linguine | 3 tbsp. | olive oil | 1/2 | sm. red onion, finely diced | 1/2 | red bell pepper, thinly sliced | 2 cloves | garlic, minced | 1/2 | jalapano pepper, seeded and minced (more if you like) | 4 tbsp. | tequila | 2 | lg. tomatoes, seeded and chopped | 2 tbsp. | fresh oregano, minced | 1/2 cup | cilantro, minced | 4 oz. | feta cheese, crumbled | 1 | avocado, peeled and chopped | | Salt and pepper to taste |

Instructions
Prepare linguine according to package directions; drain and set aside. Heat oil in a large skillet and saute the onion and bell pepper for 5 minutes. Add garlic, jalapeno and cilantro; cook for another 5 minutes or until tomatoes are softened. Stir feta cheese and avocado into the skillet. Season to taste with salt and pepper and add to the hot linguine. Combine thoroughly; adjust seasonings again if necessary.

Another of my favorite summer dishes, with nearly all of my most beloved ingredients. As good as this is served hot, it's pretty good served slightly chilled or at room temp as well.
