Jalapenos, halved and deseeded
Cream cheese, at room temperature
1 slice for each pepper *
Shrimp, little smokies, we have used sm. pieces of pre cooked rib eye

Instructions

After deseeding peppers, put a small amount of cream cheese (not overflowing) in jalapeno half. Add 1 piece of meat small enough to fit in pepper. Wrap bacon around it and toothpick them to keep it together. Place on smoker or oven on medium heat (if you do these in an oven watch out for bacon grease splatter can cause fire). I have done them on a grill, but you need a pan under them to catch grease or you will have a nice fire on your hands (I know this from experience). Cook until bacon is done and serve.

We made these up for a Superbowl party about 10 years ago. We made 6000 of these for a cook off as giveaways, they were gone the first day. <br />

It's an alright recipe. It's hard to know when it's done though, so I might've done it wrong. It was pretty good though.

This recipe kicks a**. Personally, I like thin sliced bacon, cooked in a skillet til it's "wiggly" before wrapping. I cut the tops off the jalapenos and core them thru the top. I put a squirt of a mixture of softened cream cheese, mexican shredded cheese, and barbeque spice in the bottom, add a lil smokie, then more cream cheese mix, then bacon wrap, and a little square of bacon on top. support them vertically (I use a wire rack, there are commercially built racks available) Smoke in smoker @ 185-225 degrees 3-4 hrs until bacon is crispy and magically delicious. Everybody loves them, even people that don't like spicy food. Makin me hungry just thinking about them.
