A very nice lady at a church supper shared this with me. When you want something diffeent from that green salad, this is it! Crunchy apple and jicama, sweet coconut, salty peanuts, and tart cranberries all mixed into a creamy dressing...yummy!
This is really good side with grilled chicken or baked ham; and it is a real hit at potluck suppers; also a nice addition to a ladies lunch served with deli meats and crusty rolls.
