Angel's Apricot Chicken

3 chicken breast fillets, diced
1 can (2 lbs.) apricot nectar
1 pkg. French onion soup mix
1 tsp. tsp. Asafoetida powder (optional)
2 onions, diced
2 cloves garlic, finely chopped
3 tbsp. olive oil
1 tbsp. butter
1-1/2 cup Basmati rice
2 tsp. Vegeta chicken stock powder
2 tbsp. lemon juice
Boiling water, for rice
Thin lemon slices, for garnish

Instructions

Combine oil and butter in a non-stick pan. Cook diced chicken, in batches, until browned. Remove chicken and add Asafoetida powder. Stir 5 seconds. Add onions and garlic. Cook until transparent, do not brown. Add chicken to onions in pan, stir to combine.

Combine French onion soup mix and apricot nectar. Pour over chicken. Stir until bubbling. Lower heat and cook until chicken is no longer pink, stirring occasionally.

Rice:
Cook Basmati rice in the boiling water with the Vegeta stock powder and lemon juice.

To serve:
Place a ring of rice on serving plate. Fill centre with Apricot chicken. Garnish with lemon slices.

Just moved to Memphis, TN from Melbourne, Australia, and wondering where I can purchase Vegata brand products, such as the one called for in this recipe. If I cannot, can anyone tell me the ingredients in Vegeta chicken or vegetable stock, please, so I can make at home? Vegeta manufacturer/home page escapes me in searching.

The Vegeta brand is great but there are heaps of substitutes available in the states. The whole thing about this particular brand is that it is totally vegetarian ;) Check out your stocks section of the supermarket because there are some great ones there. I spent a good amount of time in the states and trust me, a lot of your instant stocks and herb mixtures rock :) good luck and happy cooking.
