2 cups water
1/2 cup yellow cornmeal
2 tbsp. shortening
1/2 cup molasses
2 tsp. salt
1-1/2 tbsp. yeast (2 packages)
1/2 cup lukewarm water
7-1/2 cup flour (about)

Instructions

Boil the 2 cups water and add the cornmeal gradually, stirring constantly.

Add the shortening, molasses and the salt. Let stand until lukewarm.

Add yeast to lukewarm water and add the cornmeal mixture.

Stir in the flour to make a stiff dough. Knead well.

Place in a greased bowl, cover, and let rise in a warm place until doubled in bulk.

Cut through the dough several times with a knife, cover and let rise again for about 45 minutes, or until light.

Toss onto a floured board and knead well.
Add more flour if necessary.

Make into 2 loaves and place in a greased loaf tin. Cover, let rise in a warm place until doubled in bulk.

Bake in preheated hot oven (400 degrees F) for 15 minutes then reduce the heat to 350 degres and bake 45 minutes longer or until done.

Brush with melted butter and remove the bread from the pans to a cake rack.

I got checking around the Net for Anadama Bread. I kept finding "microwave the margarine". I come from a time before microwaves and margarine; use real butter and not the fake stuff. Oh, smack and pound the dough great for the stress in life :0)
Three hours complete time is an average time.
