The first time I made this, I made it with the cheeses listed, substituting plain Jack cheese for pepper cheese. The result was rather bland, and it didn't taste very cheesy.
The second time I made this, instead of the cheeses listed, I used a 2 cup package of White Rose 4-Cheese shredded cheese, and 2 1/2 cups of shredded Pepper Jack. The result was much tastier than the first time around.

Instructions
Cook pasta according to box directions for baking pasta. Place in baking dish and add milk, butter and cheese, except for 1 cup of the mild chedder. Place in oven for 25 minutes at 350°F. Remove from oven, stir and add remaining cheese on top. Bake an additional 10 minutes or until cheese is melted.
Author's Comments
If I am preparing for small children, I substitute American cheese for the Hot Pepper cheese. Can also add ham or tuna before baking.
