~ Mama's Macaroni Salad ~

"This is my mother's recipe. It is Yummy Goodness! ~ It is different from other macaroni salads, as it doesn't use salad dressing. ~ It is a thicker salad and not lose. Kinda like what you get when you make Potato Salad. ."

Ingredients

1 Pound of Pasta (Bows, Rings, Shells, etc.)
12 Eggs Hardboiled
3 cans Albacore Tuna, White Chicken or
Baby Shrimp
1/2 to 1 jar of Mayonnaise
Couple Squirts of Yellow Mustard
Garlic Powder, Onion Powder, Salt, Pepper

Instructions

1. Boil Pasta according to package directions; Drain and Rince under cold water; Put pasta in large mixing bowl.
2. Peel and chop hardboiled eggs
3. Drain and chop Tuna
4. Add Eggs and Tuna to Pasta and Mix Well
5. Add 1/2 Jar of Mayonnaise and the Mustard to Pasta Mixture; Incorporate Well
6. Add the Garlic Powder, Onion Powder, Salt and pepper and mix to incorporate well
7. Add more mayonnaise if it looks to dry: Mayo will set and shrink as it sits in refrigerator, so if there's not enough mayo, it will be dry.
8. Refrigerate for 3-4 hours or overnight for best results

Author's Comments

You can also use White Chicken or Baby Shrimp in a can instead of the Albacore Tuna. Both are excellent in this salad -

You can also use chopped onions insted of Onion Powder -

Makes 5-6 Quarts. Amount of serving is based on 1/2 cup servings.
