pickle

A condiment consisting of fruit or vegetables that have been preserved in salt (typically brine). The brine often contains vinegar, however, plain brine may be used if the pickles are left to ferment for a long time, the fermentation producing lactic acid which serves to preserve. In the United States, pickle is the common word for gherkin. Common types of pickles include dill pickles, kosher (garlic) dill pickles, sour pickles, and half-sour pickles.
