Gjetost

A caramel-colored cheese made from either goat's milk, or a mixture of goat's and cow's milks, Gjetost is the quintessential Scandinavian snack on the ski hill. It is typically served for breakfast with toast, or for snacking purposes...it is very sweet, as the milk is cooked until caramelized and then pressed.
