Wipe mushroom caps clean with a cloth. Do not peel. Preheat oven to 180ºC/350ºF. Place mushrooms onto an oven pan. Cap side down. Sprinkle with the mixed chopped herbs, then top with some of the grated cheese and a light sprinkle of Balsamic vinegar. Add a slice of tomato, finally top off with the remaining cheese and a light sprinkling salt and pepper.
Very easilly prepared, and so yummy with a mixed barbecue, and a dollop of green tossed salad.
