galanga root
Galanga root is a rhizome that resembles ginger, but features an orangish-red skin and a tough cream-colored flesh. It also resembles the flavor of ginger but is more aromatic and peppery. It originated in India and is commonly used in Indonesian, Siamese, Malaysian, Laos and Thai cuisines. It is difficult to find in North American markets, and when it is located it is usually within an Asian grocery.
