Chaource

Chaource is a perfect pairing with Champagne, which is fitting seeing as both the cheese and the wine come from the same place in France. Named after it's town, Chaource is one of many pure delights in the cheese world. It is made from raw cow's milk and has a soft, bloomy white rind that changes color with aging. Young Chaource is firm, creamy, and buttery, and spreads beautifully on baguette. As it ages, the rind takes on a creamier color and the cheese becomes runnier. The flavors range from pasty and delicate in the young stage to sharp, nutty, and buttery in the aged stage. Beware of Chaource that is caving in the center, as this is an indicator of overripe cheese, and please enjoy with sweet, juicy fruits and good Champagne.
