Keen's Cheddar

Keen's cheddar is a moist cheese made in Somerset, England, from the milk of family-raised cows. The Keen bothers believe that every aspect of their dairy, from the grass to the cows to the position of the dairy on the property affects the flavor of their cheddar. The brothers produce a big, tasty cheddar with definite hints of grass and tanginess. Keen's cheddar is aged for a minimum of 1 year on wooden shelves before going to market. Try with Syrah or other Rhône varietals, or a good English stout.
