Comté
One of the best and most popular cheeses in France, Comte hails from far eastern France (Jura, Burgundy, Champagne, Rhône, etc) and is made from raw cow's milk. It takes over 140 gallons of milk to make one 100-pound cheese. The cheese is broad, flat and round and has a greyish-yellow rind and a pale yellow pate. The flavor is sweet and salty...but also nutty and makes great sandwiches. This cheese is consumed by 40% of the French population and requires 3 months of aging before release.
