Bleu des Causses
Oft considered a mild version of Roquefort, this blue cheese is produced in the Causses mountains in southern France using cow's milk. It is aged at least 2 1/2 months, but normally between three and six months in natural limestone caves called "fleurines". It has moderate flavor and pairs well with high-acid white wines.
