Ratatouille is a vegetable stew that originated in the Provence region of southern France. The stew is typically prepared with onion, zucchini, eggplant, bell pepper, tomatoes, olive oil and fresh herbs. Purists believe the vegetables should be prepared separate from the dish before being placed in the stew.
