The literal meaning of the word aerate is to expose to the circulation of oxygen. In culinary terms, aerate is a synonym of the verb sift. When dry ingredients are passed through a fine-mesh sifter so that larger pieces can be removed and ingredients can be mixed together thoroughly, air is incorporated into the ingredients which changes the composition of the material. For example, aerating flour in turn makes the flour lighter.
