Mascarpone

More similar to a dairy product than a cheese, mascarpone hails from northern Italy and never involves the separation of curds and whey. It is smooth and sweet and has an outrageous butterfat content of about 75%. Mascarpone is made from cow's milk cream, and while it is used commonly in savory recipes, it makes a brilliant accompaniment to desserts, and is a must-have ingredient for tiramisù.
