Ingredients
1 lb. | ground venison | 2 lbs. | ground pork | 1-1/3 tbsp. | salt | 2 tsp. | black pepper | 1 tbsp. | sage | 1 tsp. | fennel seeds | 1 tsp. | smoked paprika | 1 tsp. | dried oregano | 1/2 tsp. | mustard powder | 1/2 tsp. | ground cumin | 1/2 tsp. | cayenne powder |

Instructions
Mix together the ground venison and the ground pork. In a separate bowl, mix the spices together. Once mixed, combine the spices with the ground meats.
Spread out meat on a cutting board, so that it fills the cutting board and is 1/4-inch in thickness. Use a cookie cutter to create circular patties. Using a spatula, remove the patties to wax paper.
Cover top of patties with wax paper. Cover and leave in the refrigerator, or place in zipped plastic bags if storing for later use.
