1 cup sugar
1 cup mayonaise
5 tbsp. cocoa
1 cup warm water
1 tsp. vanilla
2 cups all-purpose flour
2 tsp. baking soda

Directions:

Preheat oven to 350°F (325°F if using a glass dish). Grease a rectangular cake pan. If you use a pan where you want to remove the cake before serving (like a bundt pan or 2 round pans), be sure to flour the pan as well as grease it.
Mix the sugar and cocoa in a large bowl. Add mayonaise and vanilla and beat until combined. Alternate 1/2 of the water and 1/2 of the flour, beating well after each addition. Add baking soda last and whip on high to make batter fluffy.
Pour into prepared pan and bake approximately 30 minutes.

Don't let the idea of mayo in a cake turn you off. This cake is VERY moist and delicious.

This is a fabulous cake! It tastes wonderful, is moist and beautiful to the eye! So often I have made boxed cakes and they have bubbles inside or on top but not with this recipe. It's texture is smooth and even, making it easy to frost. You will be proud to serve it to your family and guests! I only wish I could find a similar recipe for a vanilla cake. |

I'm so excited to find this recipe!! When I was a kid, I first made this at my older cousin's farmhouse... The mayonaisse made me question whether I would like it, but as those of you who have made this know, it is so delicious!!
