Ingredients:

2-1/2 cups all-purpose flour
3/4 cup wheat germ, any flavor
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (optional)
3/4 cup raisins or chopped dried figs
1 egg
2 egg whites
1/3 cup vegetable oil
2 ripe bananas, mashed
3/4 cup orange juice
2 tsp. grated orange peel
1 tsp. vanilla extract

Directions:

Preheat oven to 350&176;F. Grease a 9x5-inch loaf pan. Combine dry ingredients and wet ingredients in separate mixing bowls; combine the two mixtures and mix until moistened. Pour into pan and bake 1 hour to 1 hour 10 minutes, or until inserted toothpick comes out clean. Remove and allow to cool in pan for 10 minutes before serving.
