Ingredients:

3 cups mashed bananas
1/4 cup lemon juice
6-1/2 cups sugar
1 bottle (6 oz.) liquid pectin

Directions:

Thoroughly mash bananas. Measure 3 cups bananas into a large saucepan. Add lemon juice and sugar; mix well. Bring to a hard rolling boil; boil hard one minute, stirring constantly. Remove from heat; quickly stir in pectin. Ladle into clean, hot jars. Seal.

I have added 2 drops of yellow food coloring to a batch. It is good as a sauce on ice cream.

I found this recipe in a farm magazine many years ago. It is a good way to use over-ripe bananas. It is a nice addition to a gift basket with a half dozen bran muffins.
