2/3 cup dark brown sugar
2/3 cup corn syrup
1/3 cup maple syrup
1/4 cup melted butter
4 eggs, beaten
1 tsp. vanilla
1-1/2 tsp. vinegar
1/2 tsp. salt
1-1/2 cups pecans

Directions:

Mix sugar, syrup and butter. Whisk in eggs. Add vanilla, vinegar and salt. Stir in pecans and stir to thoroughly coat them. Pour into unbaked pie shell. Bake at 350°F for 50 to 60 minutes.

This looks the best if you use entire pecan halves. I have even arranged the pecan halves in concentric circles, which was way too much work but looked spectacular. I think the halves are too big and the pie tastes better if the pieces are smaller. I have been thinking cutting the halves into quarters lengthwise would still look nice but be smaller than halves.
Adding the maple syrup and vinegar adds a subtle note of complexity.

I make a fool of myself in the kitchen even though I like to eat and watch Emeril all the time. Two days ago, wrapping up our Thanksgiving shopping, my wife wants to buy a store bought, Mrs Smith's Pie. Non-starter! I love pecan pie, and decided to bake one myself. Your recipe was spot-on, and everyone loved it. In fact, I'm going to bake another in a few minutes. This is about as close to Mom's secret recipe as I'll ever come. Concur that the maple syrup is the reason it tastes so good. |

This wa a nice recipe, but I added Bourbon to replace the maple syrup for a truly authentic Old- Fashioned Southern pecan pie. Try it, you'll like it. |
