Ingredients:

2 cups white beans, dried
7 cups water
1 onion, chopped
6 to 7 cloves garlic, minced
2 potatoes, peeled and chopped
1 can (8) oz. artichokes, water-packed, drained
1 can (4) oz. black olives, sliced, drained
1 can (8) oz. tomato sauce
1 tsp. Italian herb mix

Directions:

Place the beans in a large pot with the water. Cover and cook over medium heat for 1 hour. Add the onion and garlic and continue to cook until the beans are tender, 1 to 1-1/2 hours. add the potatoes and cook another 20 minutes. Add the remaining ingredients and cook for about 10 more minutes.

If you soak the beans overnight, the total cooking time may be reduced by 30 minutes.
