Ingredients:

4 potatoes, peeled or unpeeled
1 green bell pepper, chopped
1 onion, cut into cubes
4 cloves garlic, sliced
1 cup water
2 cups corn, frozen, thawed or fresh
1 lg. tomato, peeled, seeded and diced

Directions:

Place the potatoes, green pepper, onion, and garlic in a nonstick frying pan with 1/2 cup of the water. Cook, stirring, over medium heat for 5 minutes. Add the remaining 1/2 cup water. Cover and continue to cook for another 10 minutes, stirring occasionally. Add the corn and tomato. Cook, stirring, for an additional 5 minutes.
