1 box plain white cake mix
1 pkg. (3 oz.) instant pistachio pudding
3/4 cup salad oil
3 eggs
1/2 cup chopped nuts
1 cup Seven-Up
1/2 cup coconut
Cover-Up Frosting:
1 pkg. Dream Whip or
1 cup Cool Whip
1 pkg. instant pistachio pudding
1/2 cup chopped nuts
1/2 cup coconut
1-1/2 cups milk

Directions:

Mix cake ingredients and beat well. Bake in a 9x13-inch pan for 40 to 45 min. at 350°F.
Frosting:
Beat all ingredients until thick and spread on cake. Sprinkle with nuts and coconut, mixed together

I brought out this recipe to serve at work on St. Patrick's Day. It was a real hit...only the 30 yr. olds I work with didn't get it! Then I thought, they weren't even born when this all happened. Make this cake 2 days ahead of time. It is good the first day, but much better the second day! |

the icing comes out better is you use both dream whip and coolwhip.you put the dream whip,pudding mix and milk in a bowl and mix until its stiff and then you add i medium tub of cool whip. |
