Ingredients:

1 cup margarine or butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
2 cups potato chips, coarsely crushed
2-1/2 cups flour
1 tsp. baking soda
1 pkg. (6 oz.) butterscotch chips (or more as desired)

Directions:

Cream together butter and sugars. Add eggs and vanilla. Beat well. Add potato chips and butterscotch chips. Sift flour and soda together. Stir into creamed mixture. Drop by teaspoon (or bigger) on greased cookie sheet and bake for 10-12 minutes at 375°F.

Great cookies...it calls for 2 chips but it is 2 cups crushed.


In looking at the recipe for the Butterscotch Potato Chip Cookies, it states 2 potato chips. Is that really 2 single chips or 2 cups? I am wanting to try this recipe real soon. Please let me know, Thanks


I have made these cookies several times and they are allways a big hit. Your recipe is the closest to the recipe that I have. All the others on the net seem to have nuts added instead of butterscotch chips and to me that is one of the things that makes them so different. I change the butterscotch to half the amount, and add half Minature semisweet M&Ms. They look more Christmasy that way. I would highly recomend this easy cookie recipe to anyone. Scarlett
