1 pkg. lettuce
1 red bell pepper, sliced
1 red onion, sliced
2 tomatoes
1 pkg. (4 oz.) feta cheese, crumbled
1 pkg. (4 oz.) fresh mushrooms, sliced
2 cloves garlic, minced
1/4 tsp. rosemary
1/2 tsp. basil
1/4 tsp. oregano

Directions:

Mix feta cheese, garlic, oregano, rosemary and basil in bowl. Layer lettuce, bell pepper, onion, mushrooms and cheese mixture in serving bowl. Toss well. Let sit for 1/2 to 1 hour to allow flavors to mix.

You can use an Italian or Creamy Parmesan dressing with this salad. But, I have found that this salad tastes good enough that you won't need dressing!

We added some chopped cashews and diced tomatoes. Also, we used a basil-sundried tomato feta cheese, which was yummy. |
