1/2 lb. smoked turkey sausage, cut into 1/4-inch slices
1 cup onion, diced
1 cup carrot, diced
3/4 cup celery, thinly sliced
3 cups fat-free chicken broth or water
2 cups sweet potatoes, diced and peeled
1 tsp. dried oregano
1/2 tsp. coarsely ground black pepper
1/4 tsp. salt
2 (14 oz. each) tomatoes, unsalted, undrained, and coarsely chopped
1 can (14 oz.) Great Northern beans, rinsed and drained
2 bunches (lg. each) fresh spinach, coarsely chopped

Directions:

Combine first 4 ingredients in a Dutch oven over medium-high heat; saute 7 minutes or until sausage is browned. Add chicken broth (or water) and next 6 ingredients (water through beans). Bring to a boil, cover, reduce heat, and simmer 30 minutes or until vegetables are tender. Stir in spinach, cook an additional 2 minutes. Serve.
