2/3 cup butter
2/3 cup flour
6 cups milk *
1 cup bacon, cooked and crumbled
Salt and pepper, to taste
4 lg. baked potatoes
1 cup sour cream
5 oz. cheddar cheese, grated
4 green onions, chopped

Directions:

In a large soup kettle, melt the margarine. Stir in flour; heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat; simmer for 10 minutes. Add remaining ingredients; stir until cheese in melted. Serve immediately.

I used low fat sour cream, 2% cheese, and cut the bacon in half to reduce calories and it was still great. It gets too thick though, so milk has to be added after the first day. I did not peel my potatoes and used 6 instead of 4. |
