Ingredients:

8 oz. spinach, trimmed
12 oz. feta cheese
1 yellow bell pepper, seeded and sliced
2 peaches
1 avocado, peeled

Dressing:
2 tbsp. olive oil
1 clove garlic, crushed
1 tbsp. cider vinegar
2 tsp. chopped fresh oregano
2 tsp. lemon juice

Directions:

Rinse the spinach, and pat dry. Put into a serving bowl. Dice the cheese and add to the bowl with the bell pepper. Halve the peaches, remove the pits and slice the flesh. Halve the avocado, remove the pit and slice. Add to the bowl with the peaches. Put all the dressing ingredients into a screw-top jar, and shake well. Pour over the salad just before serving.
