Ingredients:

2 eggs
1-1/2 cups sugar
1/2 cup vegetable oil
1/3 cup water
1 tsp. vanilla extract
1-3/4 cups flour
1-1/2 tsp. ground cinnamon
1-1/2 tsp. ground nutmeg
1 tsp. baking soda
1/2 tsp. salt
1 cup cold mashed sweet potatoes
1/2 cup raisins
1/2 cup chopped nuts

Directions:

In a mixing bowl, beat eggs, sugar, oil and water at medium speed. Add vanilla. Combine dry ingredients. Stir into egg mixture until just moistened. Stir in sweet potatoes, raisins and nuts. Pour into two greased 5-1/4x3-3/4-inch coffee cans. Bake at 350°F for 55 to 60 minutes or until breads test done. Cool for 10 minutes on a wire rack. Remove from cans and cool completely.
