2-1/2 cups fresh corn, cooked
1 can (15 oz.) Can black beans, rinsed and drained
1 cup chopped anaheim chili peppers, seeded
1/4 cup chopped jalapeno peppers, seeded
1/4 cup vinegar
2 tbsp. vegetable oil
1 tbsp. Dijon mustard
1 tsp. chili powder
1 tsp. ground cumin
3/4 tsp. salt
1/2 tsp. pepper

Directions:

In a large bowl, combine corn, beans and peppers. Combine remaining ingredients in a small bowl. Pour over corn mixture and toss to coat. Chill until ready to serve.
