Ingredients:

2 (6 oz. each) boneless chicken breasts
8 flour tortillas

As desired:
Shredded cheddar cheese
Sliced or crushed jalapeno peppers
Butter
Sour cream
Salsa (store bought or home-made)

Directions:

Lightly butter one side of tortillas. Place butter side down on flat grill or heated frying pan. Spread cheese to cover shells. Sprinkle jalapeno's. Unless you like HOT stuff, I would advise only putting on 4 of the shells.

While shells are browning and cheese is melting grill or broil chicken breasts until done. Remove chicken breasts and dice them small. Use about half of each breast of diced chicken to spread over 4 of the shells. Take the remaining 4 shells and cover making a "Sandwich". Cut through the center and across center the opposite way making 4 "pie-slices" of each Quesadilla.

I've always found a great way to present this is to get a large oblong or round platter and place the Quessadillas around the outer edge leaving the center open. Then fill the center with a generous amount of tortilla chips and small containers of sour cream and salsa.

I love this recipe!! I'm not into hot stuff, so instead of using jalapeno peppers I chop up some pre-cooked bacon and and sprinkle it over the cheese.
