Ingredients:

5 slices bacon
1 md. onion, diced
2 cups tomatoes, chopped, seeded, and peeled
1 cup uncooked long grain rice
1 cup tomato juice or water
1 cup finely chopped fully cooked ham
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. hot pepper sauce

Directions:

In a skillet, cook bacon until crisp. Remove bacon to paper towels to drain. Discard all but 2 tb of drippings. Saute onion in drippings until tender. Add bacon and remaining ingredients. Cook, covered, over medium-low heat for 10 minutes. Spoon into a 1 1/2 qt baking dish. Cover and bake at 350°F for 45 minutes or until rice is tender, stirring occasionally.
