Ingredients:

4 Pork rib or loin chops, 1/2-inch thick
1 tsp. salt
1 tbsp. oil or shortening
1 can (16 oz.) apricot halves, drained, reserving liquid
1-1/2 cups reserved apricot liquid plus water to equal
2 tbsp. cornstarch
2 tsp. lemon juice
2 tbsp. slivered almonds

Directions:

Sprinkle chops with salt. Brown in oil on both sides in frying pan. Add 1/2 c of the apricot liquid. Cover, reduce heat and simmer for 10 minutes. Combine cornstarch and remaining 1 c apricot liquid. Add to chops. Continue simmering, stirring frequently, until liquid thickens. Add apricots and almonds. Cover and continue simmering for 10 minutes.
