Ingredients:

4 boneless, skinless chicken breast halves
1 tbsp. plus 1 tsp. margarine
1 clove garlic, crushed
1-1/2 oz. corn flake crumbs
3 tbsp. grated Parmesan cheese
1/2 tsp. ground black pepper

Directions:

Preheat oven to 400°F. In a small skillet over medium heat, add margarine and garlic; cook until the margarine melts and the garlic is fragrant. Put cornflake crumbs, cheese, and pepper in a plastic bag. Lightly dip the chicken breasts into the margarine, then the cornflake mixture. Place the chicken in a nonstick baking pan and bake for 35 to 40 minutes or until the coating is golden brown and crispy and the chicken is cooked through.
