2 cups flour
1 tbsp. poppy seeds
1/4 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1/2 cup unsalted butter
2 eggs
1 tsp. vanilla
1 tsp. shredded lemon peel
1 cup plain yogurt

Directions:

Beat sugar and butter until fluffy. Beat in eggs, vanilla and lemon peel. Add dry ingredients and yogurt alternately. Fill 18 greased or lined muffin cups 2/3 full. Sprinkle with additional sugar if desired. Bake at 375°F for 20 minutes.
