Ingredients:

Cake:
2 cups sugar
4 eggs
2 tsp. cinnamon
2 tsp. salt
1-1/2 cups chopped walnuts
1-1/2 cups vegtable oil
2-1/4 cups flour
2 tsp. baking soda
3 cups grated carrots

Frosting:
1 pkg. (8 oz.) cream cheese, softened
2 tsp. vanilla
1/4 cup margarine or butter, softened
1/2 box powdered sugar, sifted

Directions:

Cake:
Combine oil, eggs, sugar, beat at medium speed for 2 minutes. Sift all dry ingredients together. Add to egg mixture, beat on low speed for 1 minute. Fold in carrots and walnuts. Pour into greased and floured 13x9-1/2x2-inch pan. Bake for 300°F for 1 hour. Cool cake completely before frosting.

Frosting:
Blend room temperature cream cheese and butter or margarine. Add vanilla. Gradually beat in sugar. Frost cooled cake.

Is 2 tspns salt right? I found this too much and made that less than 1 spoon - but this is a very mor-ish cake!
