Ingredients:

4 eggs
4 tbsp. unsalted butter at room temperature
1 cup sugar
1/2 cup self-rising flour
1/4 tsp. salt
2 cups milk
1 cup shredded unsweetened coconut
1 tsp. vanilla extract

Directions:

Combine all ingredients in an electric blender or food processor and blend until thoroughly mixed. Pour into a buttered pie pan and bake in a preheated oven at 350°F for 1 hour. Allow to cool and serve chilled at room temperature.

The title of this British recipe refers not to the difficulty in making {it's really quite easy}! but the fact that it makes it's own crust, filling, and topping!
