Ingredients:

6 zucchini, about 7-inches long
Boiling salted water
2 eggs, well beaten
1-1/2 cups cheddar cheese, shredded
1/2 cup cottage cheese
2 tbsp. parsley
1/2 tsp. salt
1 dash pepper

Directions:

Cut off ends and scrub zucchini well. Cook whole in boiling water to cover for about 12 minutes. Drain and cut in half lengthwise. Scoop out center pulp and invert to drain.

Mix together remaining ingredients. Fill each shell with cheese mixture abd arrange in greased baking dish. Bake uncovered in 350°F oven for 15 minutes. Turn oven to 450°F for 5 minutes to brown cheese.
