Ingredients:

1 cup fine dry bread crumbs
1/4 cup your favorite mustard
4 (6 oz. each) fresh tuna steaks
2 tbsp. unsalted butter

Directions:

Place bread crumbs in a shallow bowl. Brush each tuna steak with mustard. Dip coated tuna in bread crumbs to cover all sides. Heat butter in a large heavy skillet. Cook tuna steaks over medium heat until golden brown. Turn carefully and cook other side. Do not overcook or tuna will be too dry.

1 cup rice cooked in 2 cups clam juice OR 1 cup water + 1 cup dry white wine mixed with 1/2 cup minced parsley, 1 tablespoon fresh lemon juice, freshly ground pepper, to taste and 1 tablespoon butter is good with this dish.
