Ingredients:

1-1/2 lb. zucchini
1/4 cup flour
1-1/2 tsp. salt
1-1/2 tsp. oregano
1/4 tsp. pepper
1/4 cup olive or salad oil
2 md. tomatoes, sliced
1 cup sour cream
1/2 cup Parmesan cheese, grated

Directions:

Wash zucchini and cut crosswise into 1/4-inch slices. In medium bowl combine flour, 1/2 tsp. salt, 1/2 tsp. oregano and 1/8 tsp. pepper. Toss slices in seasoned flour and coat well. Heat oil in skillet and saute zucchini until golden brown - about four minutes each side. Drain.

Cover the bottom of the baking dish with zucchini and top with tomato slices. Combine sour cream with remaining salt, oregano and pepper. Spread evenly over tomato slices. Sprinkle with cheese. Bake at 350°F for 30-40 minutes or until cheese is melted.
