3 egg yolks
1/4 lb. clarified butter
1 cup white wine
1 tsp. paprika
1 pinch Tabasco
1 tsp. lemon juice
2 tsp. Lilikoi concentrate *
1 pinch cayenne pepper
Salt, to taste

Directions:

Whisk eggs, wine and Lilikoi sauce in a double boiler. Slowly fold in clarified butter and season with paprika, Tabasco, lemon juice and salt and pepper.

** This can be found in the frozen juice section. If you can\'t find Lilikoi juice you can use any other frozen citrus juice concentrate.
